Brunch Cheese Casserole


My friend, Nena, shared this wonderful breakfast casserole with me. It's cheesy through and through. I've made it with garden jack, salsa jack and regular jack cheese. They're all delicious! I've served it on several occasions and everyone's loved it. Enjoy!

1 lb Monterey Jack Cheese
3 oz. cream cheese
1/2 cup melted butter
1 cup milk
12 oz. small curd cottage cheese
6 eggs
1/2 cup flour
1/2 tsp. salt
2 tsp. sugar
1 tsp. baking powder

Cube Jack & cream cheeses & place in greased 3 quart casserole dish. Beat remaining ingredients together & pour over the cubed cheese. Refrigerate overnight.
Bake at 350 degrees for 40 minutes until browned on top.

* Can use eggbeaters, low fat milk & light cream cheese, turns out fine.
