Fan Tan Biscuits


Wow, my New Year's Resolution has been broken! Can't believe how quickly March flew by! My goal is to post at least twice this month to make up for slacking in March! These delicious biscuits are something I made all the time when the kids were growing up. I'd kind of forgotten about them until this morning. They are crispy on the outside, tender and flaky on the inside. They "fan" out as they bake, so they're aptly named. Perfect with a hot cup of coffee or tea!

Fan Tan Biscuits

2 cups flour
3 Tblsp. sugar
4 tsp. baking powder
1/2 tsp. cream of tartar
1/2 tsp. salt
1/2 cup shortening
2/c cup milk

2 Tblsp. melted butter

1/4 cup sugar
1 Tblsp. ground cinnamon


Mix the 1/4 cup of sugar & the tablespoon of cinnamon & set aside. Melt the 2 tablespoons of butter and set aside.

Stir together the flour, 3 Tblsp. of sugar, baking powder, cream of tartar & salt in a medium bowl. Cut in the shortening until you have coarse crumbs. Add milk & stir to moisten. Place on a lightlly floured surface & knead gently 20 times.

Roll dough into a 12 x 10" rectangle. Brush with the melted butter.

Sprinkle the sugar/cinnamon mixture evenly over the dough. Cut lengthwise into 5 strips, 2" wide. Stack strips, one on top of the other. Cut into 12 one inch pieces. Place cut side down in muffin pans that have been sprayed with Pam.

Bake at 425 about 15 minutes. Remove from pan & serve warm.
