German Waffles


This is a recipe my family has enjoyed for many years. My husband had a German neighbor as a child and she made waffles similar to these. I contacted Bon Appetit searching for a similar recipe and this is what they sent.

German Waffles/Phan Kuchen

1/2 cup butter, softened
1 cup confectioner's sugar
8 egg yolks
grated lemon peel
1 cup milk
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt.

Pre heat your waffle iron.
Sift together the dry ingredients

Rub the butter to a cream & add the powdered sugar. Add grated lemon peel, then the egg yolks one at a time. Alternately add the cup of milk & flour mixture. Mix to incorporate. Spoon onto heated waffle iron & bake.

We enjoy them served with additional confectioner's sugar, fruit and whipped cream.
