D.D.'s Cesear Salad

This is my dad's "famous" cesear salad. It was our tradition that both of my kids had to make it for all the "Aunt's" when we were together. If is passed the test and it tasted like Dad made it they were then free to make it how they wanted. For example more lemon, more garlic, whatever they felt like. It is very easy and has only a few ingredients.

1 egg coddled, or boiled, for 1 to 1 1/2 minutes.
Oil, we use canola or vegetable
Parmesan cheese
Garlic
Lemon
Swirl oil in the bottom of a salad bowl until it covers the bottom. Squeeze in the juice of 1/2 a lemon , and 1 clove of garlic, pressed. Stir with a fork. This can be done up to an hour or so before hand to let it all meld together.
Coddle the egg and dump into the bowl. Scoop out the shell to get the white part also and whisk this together with a fork. Add 1/2 cup of parm. to start until about the consistency of thick pancake batter. Let sit for about 15 min and add a little salt and pepper (to taste). Taste and enjoy!
